Permanently Cutting out Gluten

Earlier in the year is when I found out I tested positive for Celiac Disease. I had a tiny feeling that I was having issues with gluten because I always felt constipated and bloated. Since cutting it out, it’s been a new life change. Thankfully, with my families help and support, it hasn’t been too hard 🥰

When I first was told I had to cut out gluten (wheat), I started stressing because I didn’t know what I could possibly eat. My body was also so used to eating gluten that cutting it out, was extremely difficult for awhile. For weeks I would eat 6-8 small meals a day and my stomach still didn’t feel satisfied, I was never full. I was eating so much that I was surprised my body could handle all the food. After about a month had passed, my stomach became accustomed to not eating gluten and I’ve been eating better and feeling better.

Baking has always been something I’ve LOVED doing. Brownies were my “go to” growing up. Recently, I made Chocolate Chip Yellow Banana Cupcakes and my family has been OBSESSED with them. So far, my favorite has been one that my family calls “cookie cake”. I just look up different recipes in my gluten free cook book and try them out. Some are a hit… some aren’t… you never know unless you try!

Even though I can’t have gluten, I’m glad there are restaurants that are gluten friendly or have gluten free options. It makes going out with my family more enjoyable knowing there’s something on the menu that I’m able to eat as well ☺️
