The hardest part about the recovery journey has been making sure I am eating enough calories throughout the day. As for me, I eat A LOT of food every day. But it’s making sure I eat the right foods and how many calories are in my meals that are important.
Since coming home from the hospital, I’ve been watching very carefully what I eat. Since I have celiac disease I can’t eat gluten, but that doesn’t mean I can’t still eat delicious foods. Thankfully, I’ve had my families support and help when it comes to food. They have been such a HUGE help for me. Every day it’s a new meal and new recipe and honestly, it’s been a lot of fun!
Every day is a new day and a new challenge. Every day I try to eat just a little bit more. I love food which is a good thing! But it’s finding the right foods that will help with my body and will sustain me for hours!
Clean eating has felt so good! My body is happy and my mental and physical health have been getting so much better! I always thought I could never eat healthy. I thought healthy foods consisted of plain salads and vegetables all the time. I thought healthy meals wouldn’t taste good and would taste gross, clearly, I was wrong! Healthy food doesn’t have to taste bad! Thats why you try out different foods and add what you like to mix! It’s about trying new things and experimenting! If you don’t like it, fix it and add stuff to it! You don’t have to put the same ingredients that you’re reading into the dish, that’s why you can substitute ingredients for what you like!

It’s fun and exciting coming up with new meals to share with your loved ones who are not only helping you but are wanting a healthier life for themselves too. π
